Flourless Banana PancakesDifficulty: Easy
Simple to make & Super delicious, packed with protein to start your day. Top with your favorite berries (Strawberries, blueberries, and Bananas). You can even drizzle a little bit of Nutella (chocolate hazelnut spread) and add low-sugar syrup for the top. Sprinkle with powdered sugar.
2 x medium Bananas (sliced)
3 x large Eggs (beaten)
1/2 tsp Vanilla
Ground Cinnamon to taste
Ground Nutmeg to taste
Strawberries and Blueberries
Sprinkle powdered / icing sugar
1 tsp x low sugar syrup
- In a medium bowl, mash 1 1⁄2 bananas; slice remaining banana and set aside for serving. Into bowl with mashed bananas, add eggs, vanilla, baking powder, cinnamon, and nutmeg and whisk until blended.
- Spray a large nonstick skillet with nonstick spray (PAM), set over medium heat. Spoon about 2 tbsp batter per pancake. Cook until edges are set and bottoms are golden, about 1 minute. Carefully flip pancakes with a spatula and cook on other side until bottoms are golden, about 1 minute.
- Serve pancakes topped with reserved sliced bananas, strawberries and blueberries and dusted with powdered (icing) sugar, a small drizzel of Nutella, and low-sugar syrup.
